Irish potatoes are sweet, creamy, and a cinnamon lover's dream come true!Ingredients:
1/4 cup butter, softened
1/2 (8 ounce) package cream cheese
1 teaspoon vanilla extract
4 cups confectioners sugar
2 1/2 cups flaked coconut
1 tablespoon ground cinnamon
1/2 tablespoon of cocoa
Mix cream cheese and butter until smooth, then add the coconut and confectioners sugar. Knead until well blended. Roll dough into balls or potato shapes.
Mix cinnamon and cocoa in a small plastic bag. Add about six balls at a time and shake until covered. Place coated balls on a cookie sheet and chill to set.
